The spray sterilizer uses nozzles set inside the pot to continuously spray fan-shaped, banded fluctuating hot water onto the items being sterilized, allowing for rapid heat diffusion and uniform heat transfer. High-temperature sterilization does not refer to the marinating process, but rather to the use of a high-temperature sterilizer after packaging. During cooling, back pressure is used to lower the temperature, and the sterilization time is determined according to product specifications. The product should be removed from the pot only after the temperature drops below 40℃.
Generally, suitable packaging materials must be selected, and after sterilization at above 121℃, they can be stored at room temperature, with a shelf life of up to 6 months or more than a year. These packaging materials are non-permeable and need to withstand high-temperature sterilization. Common materials include aluminum foil, glass jars, and soft plastic packaging.
